To make an outstanding wine, Reserve Eliezer is picked from our oldest vines. Nothing has been left to chance: from balanced use of manuring and partial grassing of the vines, to careful pruning to obtain a concentrated harvest.
Vinification
Traditional vinification methods following harvesting and destemming. Each parcel of the vineyard is vinified separately.
Pressing
The pressing process is long and gentle, over a 15 to 20 day period depending on the grape variety. The grapes are frequently rotated and are maintained at a constant temperature of 25°.
Blending
Guided by tasting notes, the blending is made after individually selecting each parcel of Merlot, Braucol, Syrah and Duras vines.
Fermentation
Matured in french oak barrels for 9 to 12 months.
Tasting
Chateau de Saurs Réserve Eliezer is richly coloured, with a bouquet of slightly spicy and ripe red fruits. It is well structured on the palate with delicate tannins, and overall a good balance supported by hidden fruits. A wine for laying down, but already quite pleasant to drink today.
